BOVINE Skulls in Dublin architecture

Does anyone have any insight into why there is such a prolific use of bovine skulls in Dublin archtitecture.
Two prime examples of where such beauties can be found are as follows:
the O’connell monument @ the top of O’connell street,
ontop of the old Ambassador cinema.I’ve put this question to a few of Dubli’s vernerable designers, but have yet to get an answer.
Does anyone out there posses the knowledge???
